About this cider
2018 single-varietal cider made with 100% Northern Spy apples and co-inoculated with Saison ale and Champagne yeast. Bright, off-dry, and earthy, with great fruit character and a mild tart finish.
Fun fact: the Northern Spy apple is native to New York State — it originated as a seedling on Herman Chaplin’s farm near Rochester around 1800.
